One Tree Brewery was the sake works in Zakyo Toshi, located just inside the Plum Blossom Gate in the residential district. It produced sake from the city's rice paddies and also an expensive and very limited run of pear wine. [1]

The brewery was founded by a merchant's widow who had lost everything but a single pear tree. She produced a pear wine with an unique taste, a sweet but strong alcohol, which became a sensation in the city. [1]
